About the Author
Yoshihiro Murata was born in Kyoto, where his family had been running the Kikunoi restaurant for two generations. After graduating from university, he spent some years honing his culinary skills in a restaurant in Nagoya, then returned to his family business in 1976. Now, he is the owner/chef of three restaurants in Kyoto and Tokyo, and the proud recipient of a total of seven stars from the Michelin Guide (three for the main restaurant in Kyoto and two stars each for his other two). Murata is the author of Kaiseki, published by Kodansha International.

This is absolutely the very best Japanese cookbook I own. At first, I thought the recipes look too simple. Also, Yoshihiro doesn't use the most common japanese ingredients such as Mirin or Dashi. I was not expecting much, but time and time again, every recipe I tried was the very best in its class. Yoshihiro Murata is one of the most famous chefs from Kyoto, and he didn't mess around with this book! Here are some of my favorites-Teriyaki Salmon (amazing!!! I even converted people who hate teriyaki sauce into loving this)-Chicken Meatball hot pot(easy and heart warming)-Yakitori(easy and great)-Salmon Hot Pot(buttery, savory salmon - yes!)-Pork and Cabbage Stew(super super easy and great for leftovers)-Kabocha Bacon Stew(amazingly easy and delicious)The cookbook is made for super easy, simple Japanese food so many dishes use water instead of stock. Try substituting water with dashi or chicken stock/broth for a little more flavor. Enjoy!
Honestly this was a dumbed down cookbook. If you are ok with cooking Japanese food using Chicken broth instead of dashi, then go ahead and buy this. "Smoked Salmon Donburi"....wha... I can't believe this book came from the head chef of Kikunoi. I ate at Kikunoi, that was one of the best meals I've ever had. Hard to imagine the same chef would sacrifice so much of the simple flavors of Japanese cuisine in order to make it accessible to the general American public.If you own either "Japanese Cooking: A Simple Art" by Shizuo Tsuji and Yoshiki Tsuji, or "Washoku: Recipes from the Japanese Home Kitchen" by Elizabeth Andoh, then do not buy this book, as it is a step down. But if you have never cooked Japanese food ever in your life, then this would be a fun way to dip your toes into the water...even if the water is chicken broth.
Nothing special. Dishes are too simple and boring. I love Japanese cuisine but this book is just a waste of money.
After cooking several recipes from this cookbook, I think it is safe to say that this is my family's favorite! Most of the ingredients are easily found and very simple to prepare. It is a fantastic way to make healthy taste good!
The receipes were quick and easy ans so tasty. I have used the receipes and will continue to do so.It is a good buy.
As the book title implies: Japanese Home Cooking!For beginners absolutely recommendable. But when you are already advanced in Japanese dishes you better seek for Morimoto, Kazuko and others. My all-time favourite Japanese Cookbook is: "Japanese Cooking - A Simple Art".Or when you fancy BBQ: "The Japanese Grill - From Classic Yakitori to Steak, Seafood and Vegetables"
Struck me as a kind of Americanized version of Japanese cuisine. That would be ok but this offers no reference back to the Japanese dishes that inspired it.
i borrowed this book from the library and liked it so much i bought it. the recipes are super easy and yummy. there are some no cook dishes that have been my go to dinners on busy nights. nice pictures, clear directions. i did have to buy a couple of ingredients that i didn't have on hand-- bonito flakes and sake.
